build: minimize the coverage toolchain profile

- Keep the pinned nightly compiler and LLVM coverage tools.
- Remove editor, source, formatting, and wasm components unused by coverage.
- Use the minimal rustup profile to reduce Nix store pressure.
- Verify the coverage shell through the complete radroots_trade policy gate.
