desktop: refresh HarvestCircle application icon

- Replace the desktop PNG with the canonical HarvestCircle mark.
- Regenerate the macOS ICNS from the same governed raster.
- Keep the application and packaged icon artwork aligned.
- Preserve the existing desktop resource paths and packaging contract.
